Kale is one of those power foods that packs a whole lot of punch into a single leaf {read the Top 10 Health Benefits here}. Known for its’ bitter taste, it is easy to see why people might go running when you say the “Kale” word. But I was watching a segment of Gywneth Paltrow cooking on TV and I was completely intrigued when she said she made kale chips from a handful of ingredients and that her kids ate them like they were potato chips. Say it isn’t so! I decided to try it, and don’t you know, my kids love them.
They couldn’t be easier to make and require only 3 simple ingredients…
Wash the kale and then cut the thick stem in the center of the leaves off. Discard. Rip the kale leaves into 1.5 inch pieces and toss with olive oil and sea salt. {Plus, sesame seeds, if desired.}
//Kale Chips
1 big bunch of kale leaves
2 tablespoons extra virgin olive oil
Coarse sea salt
Sesame seeds, optional
Preheat the oven to 400°F. Toss the kale, by hand, with the olive oil and spread out on 2 baking sheets. Sprinkle with coarse salt and sesame seeds and roast, stirring occasionally, for 12 – 15 minutes, or until light brown and crispy.
