Homemade Watermelon Popsicles

Summertime calls for watermelon everything! I am obsessed with these watermelon popsicles, and my kids can’t get enough either. They are super fun, and equally delicious. Who doesn’t love a refreshing treat on a hot summer day!?

This is the perfect recipe for your kiddos to help out with, and they will be equally excited to help eat them up! I love making memories with my kiddos in the kitchen, and am so grateful to have them home during the summer. We are always looking for new recipes that we can make together.

Add these watermelon popsicles kids version to your family’s summer treat list, trust me on this one! Watermelon popsicles cake would be another delicious treat to try out!

Ingredients

19 oz cubed seedless watermelon (about 3 1/2 cups)
5 1/2 Tbsp granulated sugar , divided
1 Tbsp fresh lemon juice
1/2 cup canned coconut milk , well shaken
13 oz kiwi (about 6 medium)
3 TBSP mini chocolate chips

Add watermelon, 2 Tbsp granulated sugar and lemon juice to a blender and blend until well pureed. Skim off foam then carefully pour into 10 popsicle molds filling each about 3/4 full. Pour in at side edge.

Sprinkle the mini chocolate chip pieces over tops then using a popsicle stick gently push down to immerse (push towards sides so you can see them once they freeze). Wipe sides clean as needed. Cover with the lid and insert popsicle sticks. Freeze 3 1/2 hours.

During last 30 minutes of watermelon popsicles freezing, whisk together whipping cream with 1 1/2 Tbsp sugar until sugar has dissolved, chill 30 minutes (you want it to be a nice pourable consistency after chilling, not too thick. If you find that it is stir in 1 – 2 Tbsp cold water to thin. Chill so it doesn’t melt the watermelon layer when pouring in).

Remove watermelon popsicles from freezer, remove lid and carefully pour a scant tsp whipping cream mixture into an even layer over watermelon layer (it works best to pour it down the edge then wipe clean). Clean sides as necessary. Return to freezer, uncovered, and chill 45 minutes.
Slice tops from kiwi and use a spoon to scoop flesh from kiwi while leaving skins. Transfer kiwi to blender along with 2 Tbsp granulated sugar. Pulse until well pureed. Force mixture through a fine mesh strainer into a bowl. Chill kiwi mixture 30 minutes.

Remove watermelon popsicles from freezer and carefully pour about 1 Tbsp kiwi mixture over coconut layer. Return to freezer and chill until popsicles are solid about 2 – 3 hours.

To remove watermelon popsicles from molds, set popsicle mold into container of warm (not hot) water for 30-45 seconds and remove.
