Summer is the perfect time to make frozen treats, for cooling off on hot sunny days! We soak up the summer in our family, long days around the pool, evenings circling the bonfire — not wasting a single moment if we can help it. I love any recipe that is quick and simple, bonus points if it’s frozen or chilled.
These strawberry raspberry popsicles in a loaf pan are super easy to make, and SO delicious. My kids love them, and so do I! They are simple enough to have little helpers in the kitchen, working alongside you as you mix everything up. I really think you could switch these up to most any fruit that you enjoy most, the possibilities are endless! Some different fruit options that I think would be equally delicious are peach, cherry, key lime, blueberry — to name a few! I think each of these combinations for loaf pan popsicles will work really well with the graham cracker “crust”.
Nothing brings me more joy than being in the kitchen as a family together. We love to get a good playlist going, set our ingredients out, and have each kid pick a task. I really think this encourages them to learn how to follow along with recipes, and shows them how fun making food can be! It’s a great bonding experience for the whole fam. They take such pride in the finished product.
For this recipe you’ll need the following:
1 8 oz. package light or regular cream cheese
1/4 cup light or regular sour cream
1/2 cup powdered sugar
1/3 cup milk any kind – I used skim
1/2 tsp Strawberry or Raspberry extract
3/4 cup fresh or frozen raspberries or strawberries
6 standard-sized graham crackers
4 Tbsp butter melted
In a food processor, add cream cheese, sour cream, powdered sugar, milk, and raspberry extract. Process until well combined. Add raspberries and pulse to combine.
Pour the mixture into popsicle molds, leaving about 1 inch of the top empty for the crust (if you don’t have popsicle molds, use small paper cups and popsicle sticks).
In a food processor, add graham crackers and process until fine crumbs remain. While the food processor is running, add melted butter in a slow stream until the mixture resembles wet sand.
Divide the crust evenly between the popsicles, pressing down gently to compact. Insert the popsicle sticks. Freeze for at least 6 hours and up to 3 days.
