Pumpkin French Toast

I have the perfect fall weather breakfast treat for you today! Weekend breakfast, a slower pace, everyone lounging together in the kitchen – it’s my favorite. Whenever I find a new recipe that I know the kids will love, I pull the ingredients together and bring the little ones in with me to create something sweet for us to enjoy together.

This pumpkin french toast is so dreamy and perfect for a cozy Saturday morning. (Recipe found HERE)

You’ll need:
1/2 cup canned pumpkin (not pumpkin pie filling!)
4 large eggs, lightly beaten
2/3 cup milk
1 teaspoon vanilla extract
2 tablespoons sugar
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
12 slices thick-cut white bread like Texas toast or Brioche
cooking spray

Add everything except the bread to a mixing bowl and whisk until smooth. Next, heat up your skillet or frying pan to low-medium heat. You could also use a griddle set to 350!

Lightly grease cooking spray to keep it from sticking.

Dunk a piece of bread in the French toast mixture, covering each side. Gently shake off any excess and grill for 2-4 minutes on one side until golden, then flip and continue cooking on the other side until everything is golden and puffy.

Repeat with the rest of the toast until everything is finished and you’re ready to serve! Make it extra special with a little whipped cream and extra cinnamon for dusting.
