Apricot Poptarts

Nothing brings out an excitement to bake something delicious like the feeling of fall.

I love scrolling through Pinterest, searching for fun and festive recipes! Bringing in fall colors, and flavors that still hint at summer as it draws to a close – it makes that movement from warm weather to a beautiful autumn so so sweet.

I have a delicious recipe for you today that will bring all of those wonderful, cozy fall feelings to life.

Place on a parchment paper lined baking sheet. Repeat with the remaining rectangles of pastry until all the pop tarts are assembled. Transfer the baking sheet to the freezer, and freeze the pop tarts for 15 minutes. Remove from the freezer, and brush lightly with egg wash. 

Bake the pop tarts for 30-35 minutes, until puffy and golden brown. Remove from the oven, cool on the baking sheet for 10 minutes, spoon vanilla icing over the top, then transfer to a wire rack and allow to cool completely. Serve.
