Summer Pancake Recipe Popsicle Pancakes
My family loves breakfast. The hustle and bustle around the kitchen, everyone together. There are days we love creating big meals together, but then there are days where we like to keep it simple. Even then, when we don’t want a lot of fuss, we can still make it fun! Something cute to bring a little extra special touch to the start of our days…
We love a big batch of Saturday morning pancakes – especially when it means fun toppings and making them extra special in super easy ways!
Start with a basic pancake recipe, or use your favorite mix. Here’s one that we absolutely love:
2 cups flour
2 teaspoons baking powder
a pinch of salt
1 tablespoon sugar
1 teaspoon vanilla
2 eggs, lightly beaten
2 cups milk
2 tablespoons melted butter
Heat your griddle or pan on medium. Mix all of your dry ingredients together in a big bowl. In a smaller bowl, combine the rest of your ingredients. Then gently combine wet and dry ingredients – don’t over-mix! A few lumps are ok.
Add a little butter to your griddle and once melted, add 1/2 cup of batter for each pancake. Flip each one once bubbles start to form. Cook for another little bit until the pancake is cooked through. Now you’re ready to eat!You can make fun shapes (we did popsicles!) or stay traditional.
We love topping ours with powdered sugar, whipped cream, and fresh fruit.
You can even get creative, cutting shapes (like this ice cream cone!) out of wax paper or parchment paper, and sifting powdered sugar on top.
Little touches like this only take an extra minute or two, and make that Saturday morning breakfast all the more fun and special!
