SWEET CORN, PEACHES, AND CHERRY SALAD with CREAMY GOAT CHEESE

I feel like this salad is my ode to summer. My last hurrah for all things fresh and light and citrusy. With a cherry on top. 😉 Because next thing you know it’ll be September, school will be well underway, and we’ll be breaking out the plaids and flannels and the soups and the pumpkins. I’ve got to admit. For the first time ever, I won’t be ready in the slightest. Summer went way too fast this year and I want to cling to her with all I’ve got. Maybe head to the beach with the kids and defy autumn to hang on just a couple of more weeks. Who’s with me?!
I’m already beginning to see signs of the changes in grocery stores. The price of fresh strawberries, corn, blueberries, and peaches are beginning to go up, and cranberries will soon get stocked in their place. We’ll start to get back in my comfort zone of one-bowl soups and chilies and I’ll begin writing about apples and butternut squash (my favorite!), but this summer has been good. It has stretched me in more ways than one and I’ve honestly loved experimenting in the kitchen with ingredients like goat cheese and essential oils.
So here’s to a summer well spent. I hope you’ve filled it full with fresh, good-for-you food and the people you love. Now here’s one last summery salad….
//SWEET CORN, PEACHES, AND CHERRY SALAD with CREAMY GOAT CHEESE
1 cob corn (1 cup kernels)
1 small peach, sliced
1 cup cherries, de-pitted
1 small shallot, sliced
6 cups of your favorite greens (lettuce, arugula, spinach etc.)
2 tbsp olive oil
6 – 7 drops Young Living Lime Essential Oil, or to taste (you can also sub 1 fresh lime, juiced)
salt and pepper to taste
2 oz soft goat cheese
Boil or grill 1 cob of corn. Once cooked, remove the kernels with a knife.
Slice the peach, cut the cherries in half and remove the pit, and slice the shallot.
In a large bowl, toss the greens, corn, peaches, cherries, and shallots with 2 tbsp of olive oil and the YL lime essential oil, or juice from one lime. Season with salt and pepper.
Plate the salad and then add the goat cheese at the end. Savor!!!!
