Whole Wheat Blue Berry Muffins

I am so so excited to bring you a recipe again today from Erin of  Sunshine & Carousels
I asked her team.up with me on a little project…
since I am not so good in the kitchen/ DIY area and she is AMA.ZING….(not only does she create incredible things but her presentation is BEAUTIFUL), I have asked her to help me out in these areas! She is truly an inspiration with all of her creativity.

Today she is bringing you this fabulous recipe!

1 cup of apple sauce (I used mixed berry applesauce)
1 1/2 cups of whole wheat flour
1/2 cup of unbleached flour
1 tsp of baking soda
1/2 teaspoon of salt
1/2 cup plus 1 tbsp of agave nectar
1 teaspoon of vanilla
1 egg
1 tablespoon of melted butter
2 handfuls of whole oats
honey (optional)


Mix your applesauce, egg, butter, agave nectar and vanilla in one large bowl. In a separate bowl sift your dry ingredients and then add your flour mixture to your applesauce mixture. Mix in your oats and then fold in your fresh blueberries. Scoop  your mixture into a muffin pan with liners and sprinkle whole oats and a drizzle of honey (optional). Bake at 325 degrees for 24-25 minutes. Cool before tasting (hot blueberries will burn just trust me). Adapted from Skinnytaste.

Makes about 18 muffins. I’m going to freeze most of ours and use as needed.
