One thing I love about the fall season is everything pumpkin flavored. However, I have never tried a savory pumpkin dish before. We were invited to a Pumpkin Party where we all brought pumpkin flavored dishes or treats, kind of pot luck style but all with pumpkin. I figured most everyone would bring something sweet so I wanted to try and mix it up with a savory dish. I searched around and found that a lot of dishes were made with Parmesan cheese and sage so I created an easy Pumpkin Pasta sauce for one of my dishes. (recipe below)
Pumpkin Pasta Sauce:
1/2 a can of plain pumpkin
1/3 cup of Parmesan cheese
1 1/4 cup of heavy cream
5 fresh sage leaves finely chopped
salt and pepper
1 1/2 tablespoon of butter
Mix all ingredients (except butter) in a small pot and heat on medium until it comes to a boil. Let it boil for three-four minutes stirring constantly. The sauce will become smooth and mixed well. Remove from heat and add your butter. Stir until melted and lightly toss over your favorite pasta. I used Rigatoni pasta, I think this would be great to use with a whole wheat pasta too. I sprinkled a little Italian cheese blend right over top.
If you’ve never tried a savory pumpkin dish before I promise this one is really good and would make a great side dish to any autumn meal.
