Breakfast Quinoa Recipe

I am so so excited to bring you a recipe again today from Erin of Sunshine & Carousels
I asked her team.up with me on a little project…
since I am not so good in the kitchen/ DIY area and she is AMA.ZING….(not only does she create incredible things but her presentation is BEAUTIFUL), I have asked her to help me out in these areas! Hooray! She is truly an inspiration with all of her creativity…it makes my heart skip! So today she is bringing you this fabulous recipe!

Today I have a perfectly sweet breakfast treat for you. A couple of weeks ago I shared a recipe for a savoryquinoa side dish and I promised to share a sweeter recipe using quinoa and so here it is.

Quinoa
Apple Juice
Honey Flavored Greek Yogurt
Fresh Blueberries
Fresh Nectarines
(or any fruit of your choosing)

2 cups of apple juice, add one cup of quinoa and boil for 12-13 minutes or until water is soaked and quinoa is fluffy.  Let your quinoa cool completely and then place in a container and refrigerate over night.

In the morning scoop a few large spoonfuls into a bowl, add one cup of honey Greek yogurt and fresh fruit to the top.  I personally used fresh nectarines and blueberries.  Perfectly healthy and delicious to get your day started.  Oh yeah..and it’s really easy.
