When you add in the beauty of perfectly ripe peaches, you have something seriously amazing! This recipe is one of my very favorites and you don’t have to feel guilty because they’re baked instead of fried! Just as delicious, though, and wonderfully easy to make for yourself! Covered in a crumb topping, and dusted with powdered sugar, you can’t go wrong with these. And this is such a fun little project to do with the kids, too!
For the donuts:
2 tablespoons butter
1/2 cup buttermilk*
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon cinnamon
Pinch salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 medium peach (diced)
*make your own buttermilk by adding 1/2 tablespoon of vinegar to the measuring cup and filling the rest of the way with milk. Set aside for a few minutes before mixing!
Preheat your oven to 350 degrees F. Grease two 6-welled donut pans.
First, melt the butter. Whisk in the buttermilk, sugar, egg, and vanilla until all mixed. In another bowl, whisk together flour, cinnamon, salt, baking soda, and baking powder.
Pour the dry ingredients into butter mixture, and stir to combine. Stir until the ingredients are just combined, but don’t over mix!
Spoon the batter into the donut pans, with each section about 1/2 full. Set aside and put together your crumb topping.
Here’s what you need:
2 tablespoons brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
1/3 cup all-purpose flour
2 tablespoons butter (cold and cubed)
Powdered sugar, for dusting
In a small bowl, whisk together both sugars, cinnamon, and flour. Cut the cold butter into the flour mixture, or use your fingers to crumble. The butter should be pea-sized, and most of the mixture looks like coarse sand.
Now finish your assembly of the donuts!
Sprinkle the diced peaches evenly over each donut and press them lightly to adhere.
Sprinkle the crumb topping evenly over the peach donut batter, pressing to adhere. You don’t want to lose any of that delicious crumble!
Bake donuts for about 10 minutes, until lightly browned on the edges. Let them cool for a few minutes, and then transfer to a wire rack set over parchment paper or a baking sheet.
Dust the tops of each donut with a light coating of powdered sugar. Serve warm or at room temperature, and enjoy with those you love most!
Microwave for a few seconds to freshen them up if you aren’t eating them the same day!
